
Ingredients
- 250 g broccoli- processed until rice type consistency
- 1/4 cup pumpkin seeds
- 1/4 cup flax seeds
- 1/4 cup sunflower seeds
- 1/4 cup ground flax seeds
- 3 eggs
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1/4 tsp ground black pepper
- zest of one lime
Instructions
Method
- Preheat oven to 180˚C
- Combine all ingredients in a bowl and mix thoroughly
- Line a loaf tin with baking paper
- Pour mixture into loaf tin and smooth out top evenly
- Bake for about 40mins or until firm to touch or until a skewer comes out clean
- Leave to cool on rack and serve warm or keep in airtight container in fridge
- Slice thinly to use
- Can be warmed in pan or toaster prior to use
Top tips
- Delicious with a variety of savoury toppings, such as hummus, roasted tomatoes or sliced salmon
- Great with a salad as a nourishing lunch or simply on its own dipped in olive oil
- Keeps in the fridge for about a week and also freezes well
