Apple nut cream

Ingredients
  

  • 1 heaped cup cashew nuts
  • 1 apple unpeeled, cored and cut into pieces
  • 1/2 teaspoon vanilla essence
  • 1/2 cup water

Method

  • Place all the ingredients in a blender and blend until you have a thick creamy texture.
  • Refrigerate for at least one hour before serving

Top tips

  • Refrigerating overnight, letting the flavours infuse, makes this nut cream even more delicious
  • This recipe makes a delicious breakfast with muesli and/or fruit
  • Use as a dessert on its own with berries on top or as a side for cake or muffins
